12 Recipes of Christmas, continued

I know what you’re thinking, what’s Christmas without Jell-O? Everyone has some, somewhere, maybe in the back of the beyond of your kitchen cupboard behind the baked beans and Bisquik. And we love our Jell-O even though we don’t show it the respect it deserves. Jell-O is a simple, steadfast, not overly bright friend who never lets us down. This holiday season is the time to brush off those old boxes and make our little friend proud.

Jellied Holiday Nog

2 packages (3 oz. each) or 1 package (6 oz) Jell-O Lemon Gelatin

2 packages (3 1/4 oz. each) Jell-O Vanilla Pudding and Pie Filling

2 tablespoons sugar

5 cups water

2 envelopes Dream Whip Whipped Topping Mix

1 teaspoon rum extract

1 teaspoon vanilla

1/2 teaspoon nutmeg

Combine gelatin, pudding mix and sugar in a large saucepan. Add water. Cook and stir over medium heat until mixture comes to a full boil. Remove from heat. Chill until thickened.

Prepare whipped topping mix as directed on package. Thoroughly blend prepared whipped topping, rum extract, vanilla and nutmeg into the thickened pudding mixture. Pour into a large serving bowl or punch bowl. Chill until firm – at least 4 hours or overnight. Garnish with cherries and mint leaves. Makes about 8 cups or 16 servings.

You’ve got peanut butter on my…

It’s the Memorial Day weekend and many of us will be cleaning off the grill and firing it up. But what will you have that you haven’t had last year? And the year before that? Cheeseburgers. But not any cheeseburgers. It’s true, we all love burgers but somewhere, in the dark recesses of our minds, we secretly crave something more. A new twist to an old favorite. And, ironically, its in an old cookbook that I found the answer.

From Good Housekeeping’s Keep Cool Cookbook (published 1971) I found this…

Peanut Butter Burgers

Lean chuck, ground

White-bread slices

Peanut Butter

Cheddar-cheese slices

Shape hamburgers; then grill to desired doneness

Meanwhile, take 2 slices of bread for each hamburger; spread one lightly with peanut butter; top the other with a slice of cheese. When hamburgers are done, put together with hamburger as filling.

Toast sandwich until golden on both side

I used a Trader Joe’s Chicken Burger with my peanut butter this evening and can honestly say I’ll be pb-ing my burgers with consistency this summer.

And, while we’re on the topic of peanut butter, Vermont Peanut Butter is making some amazing pb concoctions. I’m ordering some Good Karma (dark chocolate with pb) at this very minute. Of course they do Creamy and Chunky for those peanut butter purists out there, but for the more adventurous types, you can also get Maple Walnut, White Chocolate or Cinnamon Raisin.
